還原泰式風味

為了還原風味，配料甄選的都是地道精髓的調味料。

選用的是印尼椰漿，增香而不搶味，默默地成就著冬陰功香氣和厚重感。

甄選云南香茅草，有著討喜的檸檬味道。它是冬陰功的精髓，清新怡人又回味無窮。

番茄醬、青檸汁和小米辣賦予了甜味、酸味和辣味。

魚露雖然聞起來很難頂，但加入湯底里卻有種說不出的鮮美。

研發三個月

造就“靈魂湯底”

冬陰功的特別之處，就是它的香料味，也正是很多朋友不喜歡的原因。

所以我們反復調試配料比例，最終調高椰漿的配比。

用奶香味去平衡香茅帶來的刺激感。

目的就是做一款每個人都會愛喝的冬陰功湯底。

我們采用低溫炒制（＜125℃）與低溫（＜99℃）熬煮工藝，

在保證產品安全指標的前提下，很大程度地保留了新鮮香料的味道和酸爽的口感。

同時使用現代化工藝多層凈化水，嚴格按食品安全標準，干凈衛生有保障。

全程管路封閉熬制，確保氣味濃郁。

以豬骨湯+番茄醬打底熬煮，檸檬汁、小米辣各司其職，魚露、香茅和椰漿勾勒冬陰功湯的獨特美味。

剛熬出來的冬陰功湯，呈鮮艷的橘紅色。

口感醇厚濃烈，后勁經久不散。

為了入口時那一口順滑，我們做了去渣工藝，和某些底料有著天壤之別。

顏色上，我們家因為加入了椰漿，所以色澤更柔和濃郁，而市面上呈棕褐色。

質感上，我們家掛壁絲滑無渣，而某些湯底肉眼也能看出香料的顆粒感。

只有這樣順滑無渣的冬陰功湯底，才能做出口感出色的菜肴。

你永遠也猜不到，冬陰功還有多少種吃法：

冬陰功炒飯

1、準備食材：冬陰功湯底、泰國香米（熟）、鳳梨、火腿、培根、鮮蝦、香蔥。

2、米飯與鳳梨、火腿、培根、蝦仁翻炒，再淋上3勺冬陰功湯底，翻炒均勻。

3、裝入挖空的鳳梨，撒上蔥花，開吃。

冬陰功炒空心菜

1、食材準備：冬陰功湯底、空心菜、蒜、辣椒。

2、煸炒一下空心菜，顏色變深后，加入2勺冬陰功湯底翻炒至湯汁收底。

我給它取名“飯掃光空心菜”。

去年老刀做的冬陰功撈飯和冬陰功豬蹄，用都是我們自家的冬陰功湯底，步驟也特別簡單。

冬陰功撈飯

1、鍋中加日食記冬陰功湯料、清水、海鮮，煮熟食材即為一鍋冬陰功湯。

撈出3大勺湯，倒入1小碗米飯，轉小火繼續煮3分鐘。

2、倒出裝盤后，鋪入冬陰功中煮好的海鮮。

3、灑上一把炒米，裝飾一些青檸片，講究的還可灑上一些歐芹碎。

冬陰功豬蹄

1、2個豬蹄對半切開，冷水入鍋，放入1個蔥結、4片姜片和2勺料酒，煮沸焯水后撈出。

2、鍋中放入2勺食用油，倒入1袋日食記冬陰功湯料包，

翻炒出油后，倒入豬蹄炒勻。

3、加入沒過豬蹄的清水，大火煮沸后蓋上鍋蓋，小火燉煮2個半小時。

4、剩余的是裝點部分，也可省略：3根線椒和6根小米椒切成2cm左右的小段，半個青檸檬切片。

大火收汁至湯汁濃稠后，加入線椒段、小米椒段、青檸片和6個去蒂小番茄，再燉煮1分鐘收汁即可。

冬陰功火鍋

一袋湯底+1200ml水，煮開后放入你喜歡的食材，不用其他蘸料就很入味了。

涮肉、海鮮、蔬菜...只要你想，萬物皆可冬陰功！
