一、食材處理：做好第一步，口感翻倍

很多新手忽略食材處理，直接下鍋炒，這是菜不好吃的關鍵原因，基礎處理其實超簡單，幾分鐘就能搞定。

1. 肉類腌制：鮮嫩不柴的關鍵

不管是豬肉、牛肉還是雞胸肉，新手最容易炒老，提前腌制就不會踩雷。豬肉、牛肉切好后，加少許鹽、生抽、一勺淀粉、幾滴食用油，抓勻靜置10分鐘，淀粉能鎖住肉汁，食用油能防止粘連，炒出來又嫩又滑；雞胸肉怕腥的話，加少許料酒、姜片和一點胡椒粉，腌制15分鐘，腥味全去除，口感也不柴。

2. 蔬菜處理：去澀、保脆有妙招

綠葉菜（青菜、菠菜、油麥菜）洗干凈后，一定要瀝干水分再下鍋，不然炒菜會出水，口感變軟塌；像西蘭花、菜花、芹菜這類蔬菜，提前用開水焯燙10-20秒，撈出來過涼水，既能去除澀味，炒出來還脆嫩爽口；土豆、蓮藕切好后泡在清水里，防止氧化變黑，還能去掉多余淀粉，炒出來清爽不黏糊。

3. 蔥姜蒜備好：去腥增香基礎款

新手不用準備復雜香料，蔥姜蒜就是萬能調味組合。蔥切段、姜切片、蒜切末，炒菜、燉菜都能用，爆香后再下食材，香味直接提升一個檔次，這一步千萬別省！

二、火候控制：新手牢記“兩多兩少”

火候是烹飪的靈魂，新手不用記復雜的火候等級，記住這幾個原則就夠了：

- 大火快炒：適合綠葉菜、肉絲、蝦仁，大火快速翻炒，能鎖住食材水分，避免炒老、出水，炒出來脆嫩鮮香，全程不用超過3分鐘；

- 中小火慢煎：適合煎蛋、煎豆腐、煎雞胸肉，大火容易糊底，中小火慢慢煎，兩面金黃還不焦，新手一定要有耐心；

- 小火慢燉：適合燉肉、燉菜、熬湯，食材下鍋煮開后，轉小火慢燉，味道更濃郁，肉質更軟爛；

避坑提醒：新手別一直開大火，也別頻繁翻炒，食材下鍋后先定型，再輕輕翻動，避免炒碎。

三、調味技巧：少鹽少醬，清淡鮮香不踩雷

新手最容易調味失敗，要么太咸，要么味道雜亂，記住**“少放多次，循序漸進”**的原則，絕對不會出錯。

1. 基礎調味順序：炒菜時，先放蔥姜蒜爆香，下食材炒至斷生，先加生抽提鮮，再加少許鹽調味，最后加一點點白糖提鮮（不用多，一小撮就行），出鍋前滴幾滴香油，味道瞬間升華。

2. 避咸小技巧：鹽是百味之首，新手寧可少放，別多放！菜快出鍋時再放鹽，既能保證咸味，又不會讓食材出水變柴；如果不小心放多了鹽，加一點白糖或者幾塊土豆，就能中和咸味。

3. 簡化調味：新手不用買十幾種調料，準備鹽、生抽、老抽、蠔油、白糖、香油就足夠做大部分家常菜，味道簡單純粹，反而更下飯。
