最近逛菜市場，發現秋葵又開始大量上市了。綠油油的，一根根精神得很，價格也不貴，三四塊錢就能買一大把。

說到秋葵的做法，最簡單的就是秋葵炒雞蛋了。但就是這么一道家常菜，我發現身邊好多人都做錯了。每次在朋友圈曬這道菜，評論區總有人問：“為啥我的秋葵炒出來黏糊糊的？”“為啥雞蛋老了秋葵還沒熟？”

其實答案就一個問題：先炒秋葵還是先炒蛋？

今天咱們就來好好掰扯掰扯這個事兒。

一、大多數人犯的錯

很多人做秋葵炒雞蛋，習慣性按照“先炒蛋再炒菜”的思路來操作。先把雞蛋炒好盛出來，再炒秋葵，最后把雞蛋倒回去混合。

這個思路本身沒錯，但問題出在秋葵的處理上。

秋葵這東西有個特點——自帶黏液。如果你直接把秋葵切片下鍋炒，黏液就會跑出來，整道菜變得黏糊糊的，賣相不好不說，口感也差了一大截。有些人還會覺得惡心，像在吃鼻涕……

所以，正確的順序不是簡單地“先炒誰后炒誰”，而是要在炒之前多做一步。

二、正確答案：先處理秋葵，再分開炒

第一步：秋葵必須焯水

這是最關鍵的一步，很多人直接忽略了。

鍋里燒水，水開后加一勺鹽和幾滴食用油，把洗凈的秋葵放進去焯水兩分鐘。加鹽和油是為了保持秋葵翠綠的顏色，不會發黃。

焯完水撈出來，立刻過涼水，然后瀝干水分。這一步有兩個作用：一是去掉大部分黏液，二是讓秋葵更容易熟，后面炒的時候就不用久炒了。

第二步：秋葵切段，雞蛋打散

焯過水的秋葵切成小段，斜著切更好看。雞蛋打散，加一點點鹽和料酒，攪勻備用。

第三步：先炒雞蛋，盛出來

熱鍋涼油，油熱后倒入蛋液，用筷子快速劃散，炒到八成熟就盛出來。不要炒太久，因為后面還要回鍋。

第四步：再炒秋葵，最后混合

鍋里不用另外加油，直接倒入秋葵段，大火翻炒三十秒左右。秋葵已經焯過水了，所以很快就能熟。然后倒入剛才炒好的雞蛋，加一勺生抽、少許鹽，快速翻炒均勻就出鍋。

整個過程不超過兩分鐘，雞蛋嫩滑，秋葵脆爽，一點不黏糊。

三、還有一個爭議：要不要去籽？

網上還有一種說法，說秋葵的籽不好消化，應該去掉再炒。

我個人覺得沒必要。秋葵籽富含膳食纖維和多種營養，去掉太可惜了。而且焯過水之后，籽的口感并不明顯，完全不影響食用。除非你做給寶寶吃，那可以考慮去籽，大人吃的話直接整根切段就行。

四、進階版：加兩樣東西更好吃

如果你想讓這道菜更上一個臺階，可以在炒秋葵的時候加兩樣東西：

一是蒜末。 秋葵和蒜是絕配，蒜香能很好地中和秋葵的那種特殊味道。秋葵下鍋后先放蒜末爆香，再翻炒，香味立馬不一樣。

二是紅椒絲。 不是為了調味，純粹是為了好看。紅配綠，顏色鮮艷，端上桌就有食欲。拍照發朋友圈也更有面子。
