夏天一到，我就想起小時候最期待的場景——村口那條小河發大水。水退了，溝溝坎坎里全是魚，拿個竹簍子，卷起褲腿，一下午的收獲就是晚上餐桌上的一盆“雜魚燉豆腐”。

那時候，吃魚是為了解饞；現在走南闖北，吃魚吃的是講究。中國地大物博，淡水魚的世界更是精彩紛呈。今天咱不聊那些花里胡哨的，就盤點一下我心中最頂級的10種淡水魚。尤其是第一種，很多人可能連見都沒見過，來看看你吃過幾種？

第一名：長江鰣魚——富春江的“絕代風華”

如果說吃魚有“天花板”，那鰣魚絕對是站在金字塔尖的。它和刀魚、河豚并稱“長江三鮮”，但如今野生鰣魚基本已是“江湖傳說”。

美味密碼： 這魚最絕的地方在于吃不刮鱗！因為它的鱗片下富含油脂，清蒸時那層鱗片化為半透明的膠質，入口即化，肥美異常。那種油脂的香氣混合著細嫩的魚肉，是任何養殖魚都模仿不來的。如今想吃，全靠緣分和錢包的厚度了。

第二名：野生河豚——讓人“生死相許”的極致鮮

“一朝食得河豚肉，終生不念天下魚。”河豚的鮮美，是帶著“禁忌”色彩的。那種回甘的鮮甜，肉質緊實彈牙，確實讓人上頭。

友情提示： 現在市面上賣的絕大多數是人工養殖的暗紋東方鲀，毒性已經降到極低，正規飯店持證上崗的師傅做出來絕對安全。大家千萬別為了追求“野生”去嘗試來路不明的河豚，安全第一，美味第二！

第三名：長江刀魚——那一口“金貴”的鄉愁

以前有句話叫“刀魚不過清明”，說的是清明節前的刀魚，肉質最嫩，刺也是軟的。它的鮮是那種清雅脫俗的鮮，清蒸最能體現本味。

現狀： 隨著長江十年禁漁的實施，野生刀魚已經成為歷史。現在市面上多是養殖的“富春江刀魚”或“湖刀”，雖然風味打了折扣，但至少讓這道美味不至于絕跡。禁漁這事，咱舉雙手贊成，為子孫后代留點念想。

第四名：鱖魚——家常宴客的“顏值擔當”

鱖魚就是很多人熟知的“鰲花魚”，也是“桃花流水鱖魚肥”里的主角。它長得好看，肉質更是無可挑剔的蒜瓣肉，沒有小刺，老人小孩都能放心吃。

推薦吃法： 淮揚名菜松鼠鱖魚考驗的是刀工，但家里做，清蒸才是王道！澆上一勺滾燙的蔥油，那個“滋啦”一聲的鮮香，是評判一條鱖魚品質的最高標準。

第五名：野生翹嘴鲌——釣魚佬的“凡爾賽”

翹嘴魚，性子極烈，出水就死。這也決定了你在菜市場很難買到鮮活的，大多是冰鮮的，或者直接被釣魚愛好者現場“截胡”了。

第七名：鮰魚（江團）——烤魚界的“無冕之王”

鮰魚學名長吻鮠，長得像鯰魚但比鯰魚干凈多了。它渾身只有一根主刺，肉質比鯰魚更緊實，且沒有土腥味。

美味密碼： 這幾年網紅店里的麻辣烤魚，用鮰魚的越來越多。因為它久煮不爛，肉越燉越入味。它的魚鰾曬干后還是頂級食材“魚肚”，可見其全身是寶。

第八名：黃骨魚（黃辣丁）——湯白如奶的“提鮮神器”

黃骨魚在各地叫法不一，有的叫黃辣丁，有的叫昂刺魚。它背上那根硬刺有毒，抓的時候要小心，但味道確實是一絕。

推薦吃法： 黃骨魚豆腐湯。這魚燉湯是一絕，先用豬油煎一下，沖入開水，湯色瞬間變白，像牛奶一樣。那口湯，鮮得掉眉毛，用來泡飯，我能吃三碗。

第九名：銀魚——太湖里的“玉簪”

銀魚細如發絲，通體透明，無骨無腸。它不需要復雜的烹飪，吃的就是一個“嫩”字。

推薦吃法： 銀魚炒蛋，金黃的蛋裹著潔白的銀魚，軟嫩鮮香，是江南人家春天的必備時令菜。曬干的銀魚泡發后涼拌或者做羹湯，也別有風味。

第十名：鱘魚——餐桌上的“活化石”

人工養殖的雜交鱘魚如今很常見了，它最大的特點是肉里含鈣量高，中間的脊骨是透明的脆骨，嚼起來咯吱咯吱的，口感很奇特。

推薦吃法： 紅燒或剁椒蒸。因為肉質偏緊實，紅燒更能入味，吃起來既有吃肉的滿足感，又有吃魚的鮮美。

人間至味是“家常”

說了這么多珍饈美味，其實最令我回味的，還是兒時那盆叫不上名字的雜魚湯。那時候，一大家子圍坐在院子里，昏黃的燈泡下，筷起筷落，吃的不是魚，是熱鬧，是團圓。

好食材是自然給我們的饋贈，但最好的味道，永遠是家里的那一口煙火氣。
