食材準備

• 草魚中段 500 克（草魚中段肉質最厚最嫩，適合做這道菜）
• 豆豉 30 克（一定要用陽江豆豉，豉香最濃郁）
• 姜 1 塊
• 蒜 5 瓣
• 蔥 2 根
• 小米辣 2 個（不吃辣可以不放）
• 生抽 2 勺
• 蠔油 1 勺
• 料酒 1 勺
• 鹽 少許
• 白糖 半勺
• 淀粉 1 勺
• 食用油 適量

制作步驟

1、首先處理草魚，這是草魚去腥的第一步。把草魚中段清洗干凈，用刀把魚肉和魚骨分開，然后斜刀切成 3 厘米左右的厚片。注意不要切太薄，太薄容易碎，太厚不容易入味。

2、接下來是最關鍵的草魚去腥技巧。把切好的魚片放入大碗中，加入 1 勺料酒、少許鹽、幾片姜片和蔥段，用手抓拌均勻，腌制 15 分鐘。腌制好之后，用清水把魚片沖洗干凈，然后用廚房紙吸干表面的水分。這一步非常重要，既能去除腥味，又能讓魚片更加嫩滑。

3、吸干水分的魚片放入碗中，加入 1 勺淀粉、半勺食用油，用手抓拌均勻，讓每一片魚片都裹上一層薄薄的淀粉和油。這樣處理過的魚片，蒸出來會特別嫩滑，而且不容易碎。

4、準備配料。把姜切成姜末，蒜切成蒜末，蔥切成蔥花，小米辣切成圈。豆豉用清水稍微沖洗一下，然后用刀稍微剁碎一點，這樣豉香味更容易釋放出來。

5、調一個靈魂豉汁。碗中放入姜末、蒜末、豆豉碎、小米辣圈，加入 2 勺生抽、1 勺蠔油、半勺白糖、少許鹽，攪拌均勻。然后鍋中燒熱適量食用油，油熱后淋在調料上，激發出香味。這個豉汁是這道菜的靈魂，一定要按照這個比例來調。

6、把調好的豉汁均勻地倒在魚片上，用筷子輕輕翻拌一下，讓每一片魚片都裹上豉汁。然后把魚片平鋪在盤子里，不要疊在一起，這樣受熱均勻。

7、鍋中燒水，水開后放入魚片，大火蒸 8 分鐘。蒸魚時間一定要掌握好，8 分鐘剛剛好，時間長了魚肉會老，時間短了魚肉不熟。

8、蒸好之后取出，撒上蔥花，再淋上一勺熱油，激發出蔥花的香味。一道嫩滑鮮香、豉香濃郁的豉汁蒸草魚就做好了。

實用技巧

草魚一定要選擇新鮮的，新鮮的草魚腥味小，肉質也更嫩。挑選草魚的時候，可以看魚的眼睛是否明亮，魚鰓是否鮮紅，這樣的草魚才是新鮮的。

魚片一定要用廚房紙吸干水分，這樣裹淀粉的時候才能裹得均勻。如果魚片表面有水，淀粉就會結塊，蒸出來的魚肉口感會不好。

蒸的時候一定要水開后再放入魚片，大火快蒸，這樣魚肉才會嫩滑。如果冷水下鍋蒸，魚肉會慢慢變老，失去鮮嫩的口感。
