要說家常菜里最不起眼卻又最讓人上癮的搭配，我第一個提名番茄和土豆。

你別看這兩樣東西普普通通，超市里幾毛錢一斤，但它們湊到一起，簡直就是天生的絕配。番茄的酸甜配上土豆的綿軟，湯汁濃郁，拌飯吃能干掉兩大碗。最關鍵的是，這道菜便宜啊！一個番茄、兩個土豆，加起來花不了五塊錢，卻能做出讓全家人搶著吃的硬菜。

我第一次吃這道菜是在大學食堂。那時候窮學生一個，月底生活費見底，就打了一份番茄土豆片，沒想到驚為天人。后來畢業工作了，自己學著做，才發現原來這么簡單。現在這道菜已經成了我家餐桌上的常客，一周至少吃四五次，孩子特別喜歡，連平時不愛吃菜的先生都能就著它多吃半碗飯。

廢話不多說，直接上做法。

食材準備：番茄兩個、土豆兩個、青椒一個（不吃辣的可以不放）、大蒜三瓣、蔥花少許。調料只需要鹽、生抽、番茄醬、白糖。

第一步，處理土豆。土豆去皮切成薄片，大概兩三毫米厚就行，不要太薄，不然一炒就碎了。切好的土豆片放進清水里泡著，洗掉表面的淀粉，這樣炒出來才清爽不粘鍋。泡個十分鐘左右，撈出來瀝干水分。

第二步，處理番茄。番茄頂部劃十字，用開水燙一下，輕松撕掉外皮。然后切成小塊。有人說番茄不去皮也可以，但我建議去皮，口感更好，湯汁也更濃郁。

第三步，炒制。鍋里倒油，油熱后放入蒜末爆香。先把番茄塊倒進去，中火翻炒，用鏟子按壓一下，讓番茄盡快出汁。炒到番茄完全軟爛、湯汁紅亮的時候，加一勺番茄醬進去，這是讓湯汁濃郁的關鍵。很多飯店的番茄菜好吃，秘密就在這勺番茄醬上。

然后倒入土豆片，快速翻炒，讓每一片土豆都裹上番茄汁。接著加入適量清水，水量沒過土豆片的一半就行。蓋上鍋蓋，中小火燜煮五分鐘。

五分鐘后打開鍋蓋，你會發現土豆已經變得半透明，吸飽了番茄湯汁。這時候加入鹽、一點點生抽、一小勺白糖。白糖的作用是中和番茄的酸味，讓整體味道更柔和。最后放入青椒塊，大火收汁。

湯汁收到濃稠、掛在土豆片上就可以出鍋了。撒上蔥花點綴一下，色香味俱全。

這道菜最大的魅力在于它的湯汁。番茄和土豆在燜煮的過程中，土豆釋放出的淀粉會讓湯汁自然變濃稠，不需要額外勾芡。舀一勺澆在米飯上，紅亮的湯汁滲透進每一粒米里，酸甜開胃，讓人欲罷不能。

我還喜歡在里面加一點火腿腸或者午餐肉，切成丁一起燒，孩子更愛吃。有時候家里沒有青椒，換成芹菜丁或者胡蘿卜丁也不錯，顏色好看，營養也更均衡。

做這道菜有幾個小細節需要注意。一是土豆切好后一定要泡水，不然炒出來黏糊糊的，影響賣相和口感。二是番茄一定要炒出紅油，如果番茄本身不夠熟不出汁，可以加一點點水幫助軟化。三是鹽不要放太多，番茄本身有酸味，鹽多了會蓋住酸甜的層次感。

每次我做這道菜，孩子都會端著碗在旁邊等著，一出鍋就迫不及待地夾一塊土豆片塞進嘴里，一邊哈氣一邊說“好吃”。看著他那副饞樣，我心里就覺得特別滿足。

說到底，美食不一定非要多貴的食材、多復雜的工序。有時候最簡單的搭配，反而最能打動人心。番茄燒土豆片就是這樣一道菜——樸素、實惠、好吃，每一口都是家的味道。
