說實(shí)話，以前我一直覺得糯米蒸排骨是個(gè)技術(shù)活，光聽名字就覺得高大上，肯定得是大廚才能搞定。直到有一次去朋友家吃飯，他端上來一盤晶瑩剔透的糯米蒸排骨，我一口氣干了三碗飯，當(dāng)場求教做法。結(jié)果聽完我就笑了——這不就是泡一泡、拌一拌、蒸一蒸的事兒嗎？

今天就把這道壓箱底的硬菜分享給你們，保證零失敗，新手也能做出飯店水準(zhǔn)。

先說食材，別搞復(fù)雜了

排骨：最好是肋排，肉厚實(shí)，骨頭小，吃起來過癮。超市買的那種精肋排就行，讓師傅幫你剁成三四厘米長的小段。

糯米：圓糯米或者長糯米都可以。我個(gè)人偏愛圓糯米，口感更軟糯黏乎。千萬別用那種免洗免泡的速食糯米，蒸出來沒有靈魂。

調(diào)料：生抽、老抽、蠔油、料酒、白糖、姜、蔥、蒜。就這么簡單，不需要什么花里胡哨的醬料。

關(guān)鍵第一步：泡糯米

糯米一定要提前泡，這是整道菜的成敗所在。不泡的話，蒸出來里面還是硬的，咬下去硌牙。

提前至少四個(gè)小時(shí)，把糯米洗干凈，加水沒過兩指節(jié)。我是早上出門前泡上，晚上回來直接用，剛剛好。要是趕時(shí)間，用溫水泡兩個(gè)鐘頭也行，但效果差點(diǎn)意思。

泡好的糯米撈出來瀝干水分，加一勺生抽、半勺老抽、一點(diǎn)點(diǎn)食用油，拌勻了腌一會(huì)兒。這一步是為了讓糯米上色入味，蒸出來顏色金黃透亮，看著就有食欲。

關(guān)鍵第二步：腌排骨

排骨買回來先泡冷水里，換兩次水，把血水泡干凈。這一步不能省，否則蒸出來腥味重，影響整體口感。

泡好的排骨瀝干水分，開始腌制。我的獨(dú)家配方是這樣的：

兩勺生抽、一勺蠔油、一勺料酒、半勺老抽、一小勺白糖、姜片兩三片、蒜末一小撮、蔥花一把。戴上手套抓勻，給排骨做個(gè)按摩，讓它充分吸收料汁。

然后蓋上保鮮膜，放冰箱里腌至少一個(gè)小時(shí)。我一般是中午腌上，下午做，這樣排骨入味特別透。

這里有個(gè)小竅門：腌排骨的時(shí)候可以加一點(diǎn)點(diǎn)淀粉，能讓肉質(zhì)更嫩滑。但是別加太多，否則蒸出來口感發(fā)黏。

關(guān)鍵第三步：裹糯米

這一步很多人會(huì)翻車，我來告訴你正確操作。

找一個(gè)平盤或者大碗，底部鋪一層泡好的糯米。然后把腌好的排骨一塊塊拿出來，在剩下的糯米里滾一圈，讓每塊排骨都均勻裹上糯米。

注意了，裹糯米的時(shí)候稍微用力按壓一下，讓糯米粘牢一點(diǎn)。不然蒸的過程中糯米容易脫落，變成排骨和糯米各玩各的。

裹好的排骨整齊碼放在鋪了糯米的盤子里，空隙處再撒一些糯米填滿。這樣蒸出來整盤都是完整的，不會(huì)散架。

關(guān)鍵第四步：上鍋蒸

蒸鍋加水燒開，把盤子放進(jìn)去，大火蒸四十分鐘到一個(gè)小時(shí)。

具體時(shí)間看你排骨的大小和火力大小。我一般用普通蒸鍋，大火蒸五十分鐘剛剛好。如果用高壓鍋，二十分鐘就夠了。

蒸的過程中盡量不要開蓋，讓蒸汽一直悶在里面。你要是實(shí)在忍不住想看看，最多掀一條縫瞄一眼，趕緊蓋上。

等到糯米變得透明油亮，用筷子輕輕一戳就能穿透排骨，說明已經(jīng)蒸透了。這時(shí)候關(guān)火，別急著開蓋，燜五分鐘再拿出來。

最后的點(diǎn)睛之筆

出鍋后撒上一把蔥花，愛吃辣的再撒點(diǎn)小米辣碎。熱騰騰的糯米蒸排骨端上桌，香氣直往鼻子里鉆。
