今天花兒來和朋友們分享一道廣受歡迎的主食——紅糖饅頭。

在主食制作中加入紅糖，讓面點(diǎn)的口感更為香甜，而且在松軟之余還有韌勁，吃起來尤為適口。大家一說起紅糖，往往覺得只適合女性食用，其實(shí)紅糖的營養(yǎng)豐富，男女老少皆宜。紅糖水中所含的葡萄糖，可起到快速補(bǔ)充體力的作用，有食欲不振或營養(yǎng)不良的人，日常都可以喝些紅糖水。

紅糖中還含有豐富的鐵元素，對缺鐵性貧血有一定的輔助效果，也能促進(jìn)血液循環(huán)，到了秋冬季女性、老年人容易出現(xiàn)手腳冰涼的問題，日常做一些紅糖發(fā)糕、饅頭之類的主食，吃起來香甜，還能起到一定的養(yǎng)生作用。

上個(gè)周末，花兒回媽媽家，周日和老母親商量做點(diǎn)什么主食的時(shí)候，母親就說不然做一鍋紅糖饅頭吧。用紅糖水揉面后，甜味適度，而且還有獨(dú)特的香氣，吃起來很有食欲。深秋的午后，室內(nèi)溫度在23度左右，很是舒服，這時(shí)候揉好紅糖面團(tuán)，放在陽臺(tái)上發(fā)酵，用時(shí)不長就能發(fā)酵成胖胖的面團(tuán)，蒸好的紅糖饅頭會(huì)在高溫蒸制中自然開花，這樣面粉得以充分松弛，口感更松軟。制作中因?yàn)榧尤肓思t棗塊，這樣吃起來會(huì)有甜絲絲的棗顆粒，越吃越香。

由于需要發(fā)酵，我們可以在晚飯后準(zhǔn)備材料，這樣就有了充足的時(shí)間進(jìn)行一發(fā)和二發(fā)，不到兩個(gè)小時(shí)就能做好，這樣次日清晨，就有了香甜的主食當(dāng)早餐了。

【紅糖饅頭】

食材準(zhǔn)備：

中筋面粉300克

紅糖60克

開水120克

酵母3克

紅棗6顆

做法：

1、60克的紅糖，加入80度左右的開水，充分?jǐn)嚢栝_。利用這個(gè)時(shí)間，準(zhǔn)備6-7個(gè)紅棗，用廚房剪刀剪開成顆粒狀。

2、等紅糖水降溫到40度左右，也就是溫?zé)嵘詻龅臓顟B(tài)，倒入3克酵母，水溫不要高，否則會(huì)殺死酵母的活性。

3、酵母融化開后，將紅糖水緩緩倒入300克的面粉中，用筷子不斷攪拌，呈現(xiàn)這樣的絮狀后就可以繼續(xù)揉成光滑的面團(tuán)了。

4、面團(tuán)揉的差不多了，就放入紅棗顆粒，接著覆蓋保鮮膜，放在溫暖處醒發(fā)到兩倍大。

判斷是否發(fā)酵到位，在面團(tuán)上面戳一個(gè)洞，不塌陷不回彈，就是發(fā)酵好了。

5、將發(fā)酵好的面團(tuán)取出，揉成長條狀，分成70克左右的小劑子。

揪成小劑子，是雙手反向擰，將劑子口朝上放置。

6、在籠屜上抹油或者鋪上油紙都可以，是防止饅頭粘在上面。接著蓋上鍋蓋，二次醒發(fā)20分鐘左右。

這里如果想蒸的時(shí)候，饅頭開花明顯，可以將分好的面團(tuán)再次揉成半圓形，用廚房剪刀在頂部剪出十字花刀。

蒸鍋內(nèi)放入足量的水，等水燒開后再放入饅頭坯，蒸20分鐘。蒸的過程中要保持大火，蒸好后燜個(gè)五分鐘再開蓋。

7、熱騰騰的紅糖饅頭一出鍋，就有著淡淡的香氣，直接吃就很好吃。
