作為土生土長(zhǎng)的揚(yáng)州人，揚(yáng)州炒飯是我刻在骨子里的偏愛(ài)，它沒(méi)有復(fù)雜的配料，卻能憑借簡(jiǎn)單的食材，碰撞出最驚艷的味道。看似普通的炒飯，實(shí)則講究食材的比例與火候的把控：玉米、青豆焯水至斷生，火腿腸切成均勻小丁，炒一份金黃松軟的碎雞蛋，再加入隔夜米飯，撒上適量食鹽，大火快速翻炒，讓每一粒米飯都裹上蛋液與調(diào)料的香氣。無(wú)需過(guò)多配料，食材本身的鮮香便足以打動(dòng)人心，顆粒分明、香而不膩，一口下去，便是最樸素、最地道的揚(yáng)州家常味。
