很多人覺得焯水麻煩，或者覺得焯水會把肉的鮮味煮沒了，干脆跳過。結果呢？做出來的排骨要么腥味重，要么肉質發柴，白白糟蹋了一塊好肉。

今天我就跟大家好好聊聊：排骨為什么要焯水？怎么焯水才對？ 把這步搞明白，你做出來的排骨絕對上一個臺階。

不焯水，排骨會有啥問題？

先說說排骨那股“怪味”到底從哪來的。

排骨里面有血水，血水里含有血紅蛋白和雜質。如果你不焯水直接燉，這些血水就會留在肉里和湯里，加熱之后產生腥味和浮沫。這就是為什么有人燉出來的排骨湯渾濁不清、味道不正的原因。

另外，排骨表面還有一些油脂和臟東西，光靠沖洗是洗不干凈的。焯水能把這些東西逼出來，相當于給排骨做了一次“深度清潔”。

所以，焯水不是為了“煮熟”，而是為了去腥、去血水、讓肉質更干凈。

焯水≠隨便煮一下

但是！焯水也不是把排骨扔進開水里煮幾分鐘那么簡單。方法不對，照樣白搭。

最常見的錯誤有兩種：

第一種：冷水下鍋還是熱水下鍋？

很多人搞不清楚。正確的答案是——冷水下鍋。

如果你把排骨直接丟進滾開的水里，高溫會讓排骨表面的蛋白質瞬間凝固，里面的血水和雜質就被鎖住了，根本出不來。這樣焯水等于白做。

正確做法：排骨洗凈后放入鍋中，加入冷水，水量要沒過排骨。然后開火慢慢加熱，隨著水溫升高，血水和雜質會慢慢被逼出來，形成一層灰色的浮沫。

第二種：焯水多久？

一般來說，水燒開后繼續煮2到3分鐘就夠了。看到浮沫基本不再增多，就可以關火了。

時間太短，血水沒排干凈；時間太長，排骨的鮮味和營養流失太多，肉質也會變老。

完整的焯水流程，照著做就行

好了，我把標準流程給你總結一下，下次做排骨照著來：

第一步：清洗

排骨買回來后先用清水浸泡20到30分鐘，中途換兩次水，把表面的血水泡出來一部分。

第二步：冷水下鍋

把泡好的排骨放入鍋中，加入足量冷水，放入幾片生姜、一段大蔥、一勺料酒。這三樣是去腥三件套，缺一不可。

第三步：大火燒開，撇浮沫

開大火燒水，水快開的時候你會看到水面浮起一層灰色的泡沫。用勺子把這些浮沫撇干凈。這個過程別嫌煩，浮沫撇得越干凈，后面做出來的排骨越清爽。

第四步：撈出沖洗

水開后煮2到3分鐘，關火。把排骨撈出來，用溫水沖洗干凈表面的殘留浮沫。注意，別用冷水沖！熱排骨遇冷會收縮，肉質變硬。

第五步：正式開始烹飪

焯好水的排骨就可以用來紅燒、燉湯、糖醋、清蒸了。這時候你再做，保證沒有腥味，肉質也更嫩。

不同做法，焯水也有區別
