當下餐飲市場，競爭愈發激烈，不少餐飲老板陷入了“跟風焦慮”：看到網紅菜品火爆就盲目跟風，看到同類門店換品盈利就倉促模仿，一心想迎合市場、抓住客流，卻忘了最核心的道理——門店的立身根本，從來不是跟風追熱點，而是自身的特色與初心。

無數餐飲門店，原本有著自己的核心優勢，卻因為一味迎合市場、頻繁跟風換菜品，漸漸弄丟了自己的特色，模糊了自身定位，最終被市場淘汰。這一現象，在講究匠心與傳承的粵菜館中尤為突出，很多粵菜館為了討好大眾口味、追趕潮流，放棄了地道粵味的堅守，盲目跟風推出川湘菜、網紅小吃，最終不僅沒能留住客流，反而弄丟了自己的立身根本。

阿明的粵菜館主打地道廣式茶點和家常粵菜，憑借鮮醇的口味、精致的出品，積累了一大批忠實老客，門店生意穩定，口碑也越來越好。阿明始終堅守粵式烹飪的初心，食材講究新鮮，烹飪追求清淡本味，無論是老火靚湯還是粵式茶點，都堅持傳統做法，哪怕耗時費力，也絕不敷衍，這也是他的門店能在周邊眾多餐館中脫穎而出的關鍵。

可隨著餐飲市場的變化，身邊越來越多的餐館開始跟風換品：有的粵菜館推出了網紅麻辣小龍蝦，有的跟風做川味火鍋，還有的加入了網紅小吃，憑借熱門菜品吸引了不少年輕客流。看著身邊同行的生意變得火爆，阿明心里開始焦慮，他擔心自己的門店會被市場淘汰，于是也陷入了跟風的誤區，決定迎合市場，更換菜品。

起初，阿明只是在菜單上增加了幾款網紅川湘菜和熱門小吃，想著既能保留原有老客，又能吸引年輕客流。可沒想到，這一決定，成為了門店衰敗的開始。為了做好川湘菜，阿明不得不改變原有烹飪手法，聘請川湘廚師，采購辛辣調料，原本主打清淡鮮醇的粵菜館，漸漸變得滿是麻辣味，讓不少老客難以接受。

看到新增的網紅菜品銷量不錯，阿明變得更加盲目，開始大規模更換菜單，減少粵式茶點和家常粵菜的品類，增加更多熱門網紅菜品，甚至放棄了堅持多年的傳統老火靚湯，改用預制湯料加熱，只為節省時間、追趕潮流。他以為，這樣就能迎合市場、留住客流，可現實卻給了他沉重一擊。

老客們因為門店失去了地道粵味，紛紛選擇離開，轉而光顧周邊堅守傳統的粵菜館；而年輕客流，大多是沖著網紅菜品來的，可阿明的網紅菜品，既不如專業川湘菜館地道，也沒有自身特色，熱度褪去后，客流便急劇下滑。更致命的是，阿明一味跟風換品，忽略了粵菜館的立身根本，原本的核心競爭力徹底消失，門店變得不倫不類，既留不住老客，也吸引不了新客。

為了挽回客流，阿明又開始頻繁更換菜品，看到什么熱門就加什么，短短半年時間，菜單更換了三次，可每次更換，都只會讓門店的定位更加模糊。原本積累的口碑徹底崩塌，客流越來越少，每月都在虧損，阿明不得不縮減成本，降低食材品質，甚至裁員，可這樣的做法，只會讓門店的處境雪上加霜。

直到門店瀕臨閉店，阿明才幡然醒悟：他一味迎合市場、跟風換品，看似是抓住了潮流，實則弄丟了門店的立身根本——地道的粵式風味，才是他吸引老客、站穩腳跟的關鍵。那些被他拋棄的傳統做法、粵式特色，才是門店最珍貴的財富。
