首先要說的，就是有著“樹上蔬菜”美譽的香椿，它是春季食材里的香氣擔當，清明前后的香椿芽最是鮮嫩，錯過就要等一年。香椿自帶獨特的濃郁香氣，不管是簡單涼拌還是搭配雞蛋，都能鮮掉眉毛。

家常做法首推香椿煎蛋，這是最能保留香椿本味的做法。先把香椿洗凈，一定要焯水1分鐘，這是關(guān)鍵步驟，能去除香椿里的亞硝酸鹽，吃起來更安全。焯好水的香椿切碎，打入3-4個雞蛋，加少許鹽和白胡椒粉攪勻，熱鍋倒油，油熱后倒入蛋液，小火慢煎至兩面金黃，外酥里嫩，香氣撲鼻，一口下去全是春天的味道。還有涼拌香椿，焯水后的香椿切段，加蒜末、生抽、香醋、少許香油拌勻，清爽解膩，是絕佳的開胃小菜。

第二款春日美味，是有著“素食第一品”之稱的春筍。春雨過后，春筍破土而出，肉質(zhì)脆嫩、清甜無渣，富含膳食纖維，能解春燥、促消化，是春季餐桌上的百搭食材。

春筍的做法多樣，推薦油燜春筍和春筍排骨湯。油燜春筍做法簡單，春筍去皮切條，冷水下鍋焯水3分鐘，去除草酸和澀味，撈出瀝干。鍋中放少許油，加入冰糖炒出糖色，放入春筍翻炒均勻，加生抽、少許老抽調(diào)味，加半碗清水，小火燜煮5分鐘，大火收汁即可，咸甜適口，脆嫩入味。春筍排骨湯則更適合養(yǎng)生，春筍切塊焯水，與排骨一同燉煮，加姜片、枸杞，燉至排骨軟爛，湯鮮清甜，喝一碗渾身舒暢。
