第一吃法：紫蘇燒黃鱔

食材準備：黃鱔500克，紫蘇100克，大蒜3瓣，生姜1塊，辣椒2個，生抽20毫升，老抽10毫升，料酒15毫升，鹽適量，糖5克，食用油適量

做法步驟；

第一：處理食材

黃鱔處理：將黃鱔請攤主幫忙宰殺處理干凈，回家后用清水沖洗幾遍，去除血水和雜質，然后切成小段。
紫蘇處理：把紫蘇葉洗凈，瀝干水分備用。
配料處理：大蒜去皮切成片，生姜切成絲，辣椒洗凈切成小段。

第二：烹飪過程

焯水：鍋中加入適量的水，水開后放入黃鱔段，加入少許料酒，焯水1 - 2分鐘，撈出瀝干水分。這一步可以去除黃鱔的腥味。
煎黃鱔：熱鍋涼油，放入姜片和蒜片煸炒出香味，然后將黃鱔段放入鍋中，用中小火慢慢煎至兩面金黃。煎的過程中要不時翻動，確保黃鱔受熱均勻。
調味：黃鱔煎好后，加入生抽、老抽、糖，翻炒均勻，讓黃鱔充分吸收調料的味道。
加水燉煮：往鍋中加入適量的清水，水量以沒過黃鱔為宜。蓋上鍋蓋，用小火燉煮15 - 20分鐘，直到黃鱔熟透入味。
加入紫蘇：打開鍋蓋，放入紫蘇葉和辣椒段，繼續煮2 - 3分鐘，讓紫蘇的香氣融入到湯汁中。
收汁：最后，根據個人口味加入適量的鹽調味，開大火收汁，讓湯汁變得濃稠，裹在黃鱔上即可出鍋。

第二吃法：紫蘇燜老鴨

食材準備：老鴨：1只（約1500克），紫蘇：150克，生姜：1塊，大蒜：5瓣，八角：2個，桂皮：1小塊，生抽：30毫升，老抽：15毫升，料酒：20毫升，冰糖：10克，鹽：適量，食用油：適量，

做法步驟：

第一：處理食材

1老鴨處理：將老鴨請攤主宰殺處理干凈，回家后用清水反復沖洗，去除血水和雜質，然后切成大小均勻的塊狀。

2紫蘇處理：把紫蘇葉洗凈，瀝干水分備用。

3配料處理：生姜切成片，大蒜去皮備用。

第二：烹飪過程

4焯水：鍋中加入適量的水，水開后放入鴨塊，加入少許料酒，焯水3 - 5分鐘，撈出用清水沖洗干凈，瀝干水分。這一步能有效去除鴨塊的腥味。

5煎鴨塊：熱鍋涼油，放入姜片和大蒜煸炒出香味，然后將鴨塊放入鍋中，用中小火慢慢煎至表面金黃。煎的過程中要不斷翻動鴨塊，確保每一面都煎到。

6調味：鴨塊煎好后，加入生抽、老抽、冰糖，翻炒均勻，讓鴨塊充分吸收調料的味道。

7加入香料：放入八角和桂皮，繼續翻炒片刻，使香味充分散發出來。

8加水燜煮：往鍋中加入適量的清水，水量以沒過鴨塊為宜。蓋上鍋蓋，用小火燜煮40 - 50分鐘，直到鴨塊熟透軟爛。

9加入紫蘇：打開鍋蓋，放入紫蘇葉，繼續燜煮5 - 10分鐘，讓紫蘇的香氣融入到湯汁中。

10調味收汁：最后，根據個人口味加入適量的鹽調味，開大火收汁，讓湯汁變得濃稠，裹在鴨塊上即可出鍋。

第三吃法：紫蘇煎雞蛋

食材準備：紫蘇葉：50克左右，雞蛋：3 - 4個，鹽：適量，食用油：適量，

做法步驟；

第一：處理食材

1紫蘇處理：把紫蘇葉放在清水中仔細清洗，去除表面的灰塵和雜質，然后撈出瀝干水分。將紫蘇葉切成細碎的小段，盡量切得均勻一些，這樣在煎蛋時能更好地融入雞蛋中。

2雞蛋處理：把雞蛋打入一個干凈的碗中，用筷子或打蛋器充分攪拌，讓蛋清和蛋黃完全混合。攪拌過程中可以稍微多攪拌一會兒，使雞蛋液更加均勻。

第二：調味攪拌

3在攪拌好的雞蛋液中加入切好的紫蘇碎，同時放入適量的鹽，再次攪拌均勻，讓鹽和紫蘇充分融入雞蛋液里。鹽的用量可以根據個人口味進行調整，如果喜歡口味淡一些，可以少放一點鹽。

第三：煎制過程

4熱鍋涼油：將平底鍋放在爐灶上，開小火預熱，然后倒入適量的食用油。熱鍋涼油可以防止雞蛋粘鍋，讓煎出的雞蛋更加完整美觀。

5倒入蛋液：當油微微冒煙時，把攪拌好的紫蘇雞蛋液緩緩倒入鍋中，讓蛋液均勻地鋪滿鍋底。這時可以輕輕晃動鍋子，使蛋液分布得更加均勻。

6小火慢煎：保持小火，慢慢煎制雞蛋。在煎的過程中，你會看到雞蛋液逐漸凝固。大約1 - 2分鐘后，觀察雞蛋的表面，當表面基本凝固，只有少量蛋液還未完全凝固時，用鏟子小心地將雞蛋翻面。翻面時動作要輕，避免雞蛋破碎。

7煎至兩面金黃：繼續用小火煎另一面，直到雞蛋兩面都呈現出金黃色，且熟透為止。整個煎制過程大約需要3 - 5分鐘，具體時間可以根據雞蛋的厚度和火候進行調整。

第四吃法：紫蘇生姜紅糖水

食材準備：紫蘇葉：15克，生姜：20克，紅糖：30克，清水：約500毫升。

做法步驟：

第一；處理食材

1紫蘇葉處理：如果是新鮮紫蘇葉，用清水沖洗干凈，去除表面的雜質和灰塵；若是干紫蘇葉，用溫水浸泡5 - 10分鐘，讓其充分舒展，然后洗凈。

2生姜處理：將生姜洗凈，不用去皮，切成薄片。生姜皮也有一定的藥用價值，保留它能讓飲品的功效更全面。

第二：煮制過程

3加水煮開：把處理好的紫蘇葉和生姜片放入鍋中，加入約500毫升清水。大火將水燒開后，轉小火煮10 - 15分鐘。在煮的過程中，紫蘇和生姜的有效成分會逐漸釋放到水中。

4加入紅糖：待煮至湯汁顏色變深，散發出濃郁的香氣時，放入紅糖。繼續用小火煮3 - 5分鐘，期間用勺子攪拌，確保紅糖完全溶解。
