很多人覺得焯水麻煩，或者覺得焯水會(huì)把肉的鮮味煮沒了，干脆跳過。結(jié)果呢？做出來的排骨要么腥味重，要么肉質(zhì)發(fā)柴，白白糟蹋了一塊好肉。

今天我就跟大家好好聊聊：排骨為什么要焯水？怎么焯水才對？ 把這步搞明白，你做出來的排骨絕對上一個(gè)臺(tái)階。

不焯水，排骨會(huì)有啥問題？

先說說排骨那股“怪味”到底從哪來的。

排骨里面有血水，血水里含有血紅蛋白和雜質(zhì)。如果你不焯水直接燉，這些血水就會(huì)留在肉里和湯里，加熱之后產(chǎn)生腥味和浮沫。這就是為什么有人燉出來的排骨湯渾濁不清、味道不正的原因。

另外，排骨表面還有一些油脂和臟東西，光靠沖洗是洗不干凈的。焯水能把這些東西逼出來，相當(dāng)于給排骨做了一次“深度清潔”。

所以，焯水不是為了“煮熟”，而是為了去腥、去血水、讓肉質(zhì)更干凈。

焯水≠隨便煮一下

但是！焯水也不是把排骨扔進(jìn)開水里煮幾分鐘那么簡單。方法不對，照樣白搭。

最常見的錯(cuò)誤有兩種：

第一種：冷水下鍋還是熱水下鍋？

很多人搞不清楚。正確的答案是——冷水下鍋。

如果你把排骨直接丟進(jìn)滾開的水里，高溫會(huì)讓排骨表面的蛋白質(zhì)瞬間凝固，里面的血水和雜質(zhì)就被鎖住了，根本出不來。這樣焯水等于白做。

正確做法：排骨洗凈后放入鍋中，加入冷水，水量要沒過排骨。然后開火慢慢加熱，隨著水溫升高，血水和雜質(zhì)會(huì)慢慢被逼出來，形成一層灰色的浮沫。

第二種：焯水多久？

一般來說，水燒開后繼續(xù)煮2到3分鐘就夠了。看到浮沫基本不再增多，就可以關(guān)火了。

時(shí)間太短，血水沒排干凈；時(shí)間太長，排骨的鮮味和營養(yǎng)流失太多，肉質(zhì)也會(huì)變老。

完整的焯水流程，照著做就行

好了，我把標(biāo)準(zhǔn)流程給你總結(jié)一下，下次做排骨照著來：

第一步：清洗

排骨買回來后先用清水浸泡20到30分鐘，中途換兩次水，把表面的血水泡出來一部分。

第二步：冷水下鍋

把泡好的排骨放入鍋中，加入足量冷水，放入幾片生姜、一段大蔥、一勺料酒。這三樣是去腥三件套，缺一不可。

第三步：大火燒開，撇浮沫

開大火燒水，水快開的時(shí)候你會(huì)看到水面浮起一層灰色的泡沫。用勺子把這些浮沫撇干凈。這個(gè)過程別嫌煩，浮沫撇得越干凈，后面做出來的排骨越清爽。

第四步：撈出沖洗

水開后煮2到3分鐘，關(guān)火。把排骨撈出來，用溫水沖洗干凈表面的殘留浮沫。注意，別用冷水沖！熱排骨遇冷會(huì)收縮，肉質(zhì)變硬。

第五步：正式開始烹飪

焯好水的排骨就可以用來紅燒、燉湯、糖醋、清蒸了。這時(shí)候你再做，保證沒有腥味，肉質(zhì)也更嫩。

不同做法，焯水也有區(qū)別
